Step 1: Preparing ingredients
- Boil and peel the quail eggs
- Clean, wash and slice the pork belly
- Marinate the meat with some pepper, salt, sugar and let it rest for 30 – 45 minutes
Step 2: Add a tablespoon of water with 2 tablespoons of sugar into a pot and boil until the mixture turns golden brown. Then add in the shallot and fry until you can smell the shallot cooking.
Step 3: Pour the pork belly into the mixture, add a little fish sauce and stir well, cover the lit and let it cook for about 5 minutes on medium heat.
Step 4: Proceed to add the peeled quail eggs, season to taste and let it simmer over low heat to let the spice covered the quail eggs and meat. If you like it a bit spicy you can add chili powder or fresh chili inside.
Step 5: Turn off the heat, sprinkle some pepper and decorate on a plate with diced green onions. The dish is now ready to serve with steamy rice.
Sour Red Tilapia Soup

Cooking steps
Step 1: Preparing ingredients
- Scrape the Red Tilapia’s scales and rinse with water. Depending on whether the fish is big or small, cut the fish into bite-sized pieces.
- Wash the Okra, slice them diagonally.
- Pineapple slices into bite-sized.
- Cut tomatoes into 4.
- Wash bean sprouts and drain them.
- Peel off the green skin of the Colocasia gigantea and slice them diagonally like the okra.
Step 2: Heat an oil pan on the stove. Put the sliced shallots in a frying pan. When the shallot begins to turn light yellow, add the tomatoes, stir until the tomatoes are soft and colored.
Step 3: Add the red tilapia, turn it slightly to allow the spices to marinate both sides of the fish. When the fish meat starts to cook again, pour in a bowl of water and bring it to a boil. The amount of water can be adjusted depending on the number of people. When the water boils, use a spoon and remove the foam from the top of the pot to make the broth cleaner.
Step 4: Season the soup with salt, pepper, sugar, … to your taste. Add tamarind juice in the pot and cook again.
Step 5: Turn the heat higher, add Colocasia gigantea, pineapple, okra, bean sprouts and cook the soup to a boil again, then turn off the heat.
Stir-fried green beans

Cooking steps
Step 1: Preparing ingredients
- Soak the green beans in dilute salt water for 10 minutes, wash them with water and cut them in half.
- Peel the carrot, slice it into bite-sized slices.
Step 2: Add the oil in the pan, add minced garlic and the carrots to stir-fry lightly. Add seasonings to your taste and cover the lid.
Step 3: After the carrots are tender, add the beans to stir-fry them and keep the heat medium for 10 minutes.
Step 4: Add the scallion, cilantro and stir evenly. When it’s done, turn off the heat and decorate the beans on a plate.
