Pangasius kunyit stew with pineapple

Practice

Stage 1Pre-process raw materials

  • The pangasius kunyit: wash it with salt, then wash it several times with the water and slice it.
  • The bacon: get rid of the hair, firstly wash it with salt, then wash it several times with the water, and finally wash it with an alcoholic drink to eliminate the fishy-smelling of the bacon. After washing, cut it.
  • The pineapple: peel and slice it.
  • Chop the garlic.
  • Slice the chili and the scallion head.

Stage 2: Make natural food coloring for the bacon and the fish with oil and sugar

  • Put some oil to the heated pan. When the oil becomes hot, put in and stir the sugar well until it turns to another color.

Tips:

  • When the sugar turns to a puce color, turn off the stove immediately. With the heat left on the stove, the sugar will transform its color to a beautiful brown.
  • If you don’t turn off the stove in time, the sugar will turn to black, which is not attractive.  

Stage 3:

  • Wait for the sugar to become less hot, then put the chopped garlic and scallion to the pan.
  • Put in and stir well the bacon.
  • Then put in and stir the fish to the pan.

Stage 4: Prepare a spice mixture for stewing the fish, including one spoon of seasoning, 2 spoons of MSG, 100 g of fish sauce. Then put the mixture to the pan and stir it well.

Stage 5:

  • Put the sliced pineapple pieces to a pot first.
  • Afterward, put in the bacon and the fish upon pineapple pieces, next add some cut chili and scallions on top of the dish and wait for 30 minutes for the fish to marinate.

Stage 6: Place the pot on the stove with the small hit. Wait until it is cooked.

Kimchi broth with beef

Practice

Stage 1: Prepare

  • The kimchi: you should buy a complete kimchi cabbage and cut it to pieces.
  • Cut the beef shank to pieces. Marinate those pieces with one spoon of sugar, one spoon of seasoning, ½ teaspoon of pepper and 6 cloves of garlic.
  • Shiitake mushrooms: after dipping them into the water for blooming, cut each in half and sprinkle them with one spoon of seasoning.
  • Enokitake mushrooms: cut the roots, wash and dip them into saltwater and then wash them again.
  • The soft tofu: slice it into pieces.
  • The leek: wash and slice it slightly.
  • Slice the horn chili slightly.

Stage 2: Put the beef shank into a pot of 1-liter water and 1 bowl of kimchi water. Stew the beef until it’s ready.

Tip: The kimchi broth will get a better smell if you stew the beef with the kimchi water and the smashed garlic.

Stage 3: When the beef gets softer, put in enokitake mushrooms. Wait for a moment, then put in the kimchi cabbage, soft tofu, horn chili and leek. Cook in 3 minutes until it boils, then turn off the stove.

Stir-fried water spinach with garlic

Practice

Stage 1: Prepare

  • The water spinach: pick and get rid of yellow leaves. Then dip it into the saltwater in 10-15 minutes, then wash it several times and dry it in a basket.
  • Chop the garlic.
  • Put the ice in a bucket and add some water in it.

Stage 2: Boil the water spinach

  • Add water and some salt to the pot.
  • When the water boils, put in the vegetable in 1 minute and then take it out. Then, put it to the bucket full of cold ice.
  • Next, take it out and dry it in a basket.

Tip: When you put the boiled water spinach into the ice bucket, it will keep the green color of the vegetable. Afterward, stir the spinach with spice.

Stage 3: Stir the water spinach

  • Add the cooking oil into the heated pan.
  • When the oil turns hot, put and stir well the chopped garlic to the pan.
  • Put the boiled spinach to the pan and stir it quickly.
  • Add a spice mixture including: 1 spoon of seasoning and some lemon juice for a delicious taste.
  • Continue to stir the spinach along with the spice mixture quickly and then turn off the stove.

The dessert: Nam Roi pomelo

Tips to get a delicious pomelo

  • Select the fruit which is ripe and has a dried-up stalk. It will be a delicious one.
  • Select the fruit whose thorns are equally big. If you want to eat it right away, you should look for the fruit whose skin is rough and dark yellow.
  • Select the fruit, which is heavy, firm and has a thin skin.
  • Select the fruit that weighs between 1-1,5 kg, not under 1 kg.
